How to make Erewhon’s Coconut Cloud Smoothie at home

If you haven’t heard of Erewhon Market, you’ve probably heard of (or seen) Marianna’s coconut cloud smoothie. It’s made its rounds all over TikTok and Instagram, mostly because it looks so dang beautiful. The truth is, it’s trendy, it’s pretty- but it’s also $17. However– this is a health and wellness blog, and since it’s full of fruit, healthy fats, and spirulina, I thought it would be a good idea to find a way to make this at home, which in the long run will save you money since you’ll be able to make multiple servings with all your ingredients. Here’s what you’ll need for 2 servings- or 1 very large serving (no judgment):

  • 1 can of coconut cream
  • 1/4 a cup frozen avocado (or 1/4 of a fresh avocado)
  • 3/4 a cup frozen pineapple
  • 1 frozen banana
  • 1 TB of almond butter
  • 1 tsp of vanilla extract
  • 3/4 tsp of blue spirulina (not green)
  • 2 scoops of vegan collagen peptides, like this one (make sure you stick to unflavored or vanilla)
  • 3/4 a cup of non-dairy milk (I like a thicker consistency like Ripple or oat milk, but any non-dairy milk works)
  • Handful of ice cubes
  • Optional: a pitted date, stevia, or other sweetener of your choice (personally, I find it sweet enough as is, but if you have a sweet tooth, feel free to get creative!)

How to:
1. Add 2 tablespoons of the coconut cream to the bottom of your glass. Use a spoon to swirl it around the cup.
2. Add all of the remaining ingredients to a blender, and blend until smooth. Pour it into the glass with the coconut cream. (It will be thick, so scrape down the sides of the blender as needed).
3. Enjoy!

Notes:

  1. What is spirulina?
    In short, spirulina is a blue-green algae (aka Cyanobacteria), and it’s jam packed with nutrients. According to the US Department of Agriculture, a single tablespoon of dried spirulina powder contains: 4 grams of protein, Vitamin B1, B2 and B3, Copper, and iron, magnesium, potassium, and more.
  2. Why can’t you use green spirulina in this smoothie?
    For starters, it won’t be blue and cloudy! But it also completely alters the taste. Green spirulina is a whole food with tons of benefits but it has a strong, fishy taste. Blue spirulina is an extract, with a neutral taste (still packed with antioxidants and vitamins), and it doesn’t impact the smoothie’s taste.
